For any lunch or dinner, this homemade silky Lemon Garlic Mashed Potato Gnocchi is ideal. This straightforward but flavorful lemon, garlic, and parsley sauce is the perfect complement to elevate vegan comfort food to another level. The creamiest, richest, and zingiest dairy-free lemon sauce is used to top this vegan gnocchi. This quick dish is the epitome of vegan comfort food because it includes robust kale and is seasoned with garlic and a sprinkling of thyme.
This specific vegan gnocchi dish is one of my favorites because it's not only incredibly tasty and comforting, but also quite simple to put together. Because if you have to spend the entire day in the kitchen making a dinner, how comforting can it really be?
I believe that simplicity is always best. One of my favorite flavor combos is lemon, garlic, and parsley. It only takes a few simple steps: heat up some olive oil, add plenty of minced garlic, parsley, and lemon juice. It is a really simple sauce to create, taking only a few minutes. Additionally, put the cooked gnocchi immediately into the sauce, allowing the flavors to mingle and meld.
Ingredients:
- 500 g leftover mashed potato.
- 1 teaspoon salt.
- + more if necessary, two cups of all-purpose flour.
Sauce:
- 3 tbsp olive oil.
- 4 cloves minced garlic.
- 1 handful chopped parsley.
- 1 lemon juice.
Preparation:
- Add the mashed potatoes, salt, and flour to a big bowl.
- Mix the ingredients with clean hands, then carefully knead them into a tiny, smooth ball.
- If the mixture is too sticky, add additional flour until your hands can handle it without sticking.
- Form a long sausage shape with a tiny part at a time.
- Each piece of floured gnocchi should be about 1.5 cm long.
- Before heating the water to a boil, add salt. Gnocchi should be cooked until they float to the surface of the water after being added gradually.
- Lemon juice, parsley, and garlic are added to heated olive oil. Once fully combined, immediately add the prepared gnocchi to the sauce. Enjoy while the components absorb one another!

I believe so! Although I haven't personally produced a gluten-free version, I believe you could thicken the sauce by replacing the wheat flour with a gluten-free flour mixture. Additionally, you must use vegan gluten-free gnocchi.

Although I haven't tried the dish this way, you can, but I'm not sure how it will end out.
Does the sauce have a coconut flavor?
Not to me, but if you can't handle coconut at all, you might want to pass on this recipe or try it with a different non dairy milk.
