  • To boil the water, use a tea kettle, a microwave, or a burner. I batch-boil the water in my microwave, but Barbara has shorted out hers before by doing this. She switches to an electric tea kettle instead. You can boil water in any way you like, including on the stovetop.
  • Tongs: When putting the jars into and out of the hot water, canning tongs come in very handy.
  • To cover the jars with at least 1-2 inches of water when boiling them, you need a fairly deep canner or large pot. Since I don't have a professional canner, I use my deepest stock pot to process the jars at this stage.

  1. Home canning jars and lids should be prepared in accordance with the manufacturer's directions for sterilized jars. until filled, keep jars and lids hot. Always use brand-new lids.
